Miami Slice

For New Yorkers craving a taste of home, Miami Slice promises pizza that rivals the Big Apple’s signature.

The University of Miami student body is made up of an overwhelming percentage of New York natives. They’ll tell you how glad they are to be out of the cold or away from the hustle and bustle of the city, but if you ask them the one thing they really miss, there’s a pretty good chance they’ll say the pizza. As a New Yorker myself, it’s true: Nothing truly compares to New York pizza, but Miami Slice’s“artisan NY-style pizza” comes pretty close.

The Story of the Slice

New York pizza is world-famous for a reason — particularly because it isn’t so easily replicated. Apart from the cultural significance of being in New York and the phenomenon of $1.50 pizza when everything else in Manhattan is extremely overpriced, New York pizza just tastes like magic.

Recreating New York pizza outside of the Big Apple is especially difficult because a large part of what makes it so good is where it’s from— even past a figurative sense. Many believe Manhattan’s water composition makes New York tap water the secret ingredient to achieving the specific texture of the dough, though there’s little evidence to prove this isn’t simply a myth.

Past dough consistency, New York pizza is heralded for several definitive traits — particularly, its high-gluten, floured crust and thin layer of slightly-sweet sauce topped with low-moisture mozzarella. New York pizza can also be defined by its typical baking strategy. It’susually cooked in a coal-fired or older gasdeck oven, which promises the signature char semi-masochistic New Yorkers crave.

Mushroom Truffle and Pepperoni Proper(which features hot honey)are Miami Slice fan-favorite.

All this to say — there’s technically nothing stopping pizza shops outside of Manhattan from creating equally enticing slices. There just had never been anyone to successfully do it — until Miami Slice.

Miami Slice is celebrating its 7th year in operation. The company spent a fortnight testing various dough iterations in order to recreate the iconic New York crunch and flavor. Miami Slice opened only upon achieving their current recipe, because, as they declare on their website, “You can’t rush the craft.”

For their first two years in business, Miami Slice operated exclusively through curbside pickup, delivering directly fromtheir original pizza lab. A small gathering of friends and family quickly grew into a large customer base which remained loyal when the slice bar finally opened.

An especially unique attribute of Miami Slice is their delectable selection of flavors.

Miami Slice Today

Unlike most prominent restaurants in South Florida, Miami Slice refuses reservations. Customers choose between walk-in dining or takeout. Finding its home in a compact corner of Key Biscayne, spots at the pizza bar are extremely limited. Lines often trail out the door.

With nearly 100,000 followers on Instagram, Miami Slice has become much more than simply a restaurant — it’s become a Miami staple.

An especially unique attribute of Miami Slice is their delectable selection of flavors. Past classic margherita, customers can also taste-test “pepperoni proper” (a combination of classic pizza elements plus pepperoni and hot honey), “la salsera” (which features red sauce, vodka sauce and pesto), “leeks on bacon” (garlic confit cream, mozzarella, leeks and bacon) or “mushroom truffle” (made up of truffle cream, mozzerella and a mushroom medley).

Grab a slice for yourself at Miami Slice locations in Downtown Miami or Key Biscayne.

In many ways, Miami Slice’s allure admittedly comes primarily from crowd psychology. Their lack of reservations, complemented by limited bar seating, generates a communal bias: “If it’s that hard to get, it must be good.”

Whether Miami Slice truly rivals New York pizza depends who you ask. New York-bornpurists — myself included — will always contest that nothing beats the original. But a thousand miles from home, Miami Slice offers a promising replica that might just come close enough to (temporarily) fill that void.
