Loaded Avocado Toast

Ingredients:

Steps:

  1. Scoop out the meat of the avocado into a small bowl. Squirt generously with lemon juice and sprinkle with everything bagel seasoning. Combine until creamy.
  2. Slather thick layers of the avocado mixture over two slices of toast. 
  3. Now’s the fun part! Experiment with a medley of toppings to elevate your avo toast from basic to loaded.
    • Charred corn
    • Sliced tomatos
    • Julienned carrots
    • Black or pinto beans
    • Grilled or raw onions
    • Pico de gallo or salsa
    • Roasted garlic cloves
    • Spices and seasonings for heat
    • Halved cherry or grape tomatos
    • Sunny-side-up or poached eggs
    • Chopped herbs: rosemary, basil, cilantro, parsley
    • Cheese: crumbled feta or goat, shredded cheddar
    • Crisp leafy greens: baby arugula, spinach, kale, romaine, red cabbage, frisée, watercress, microgreens
    • A drizzle of olive oil and/or balsamic glaze/vinegar

Almond Butter Toast

Ingredients:

Steps:

  1. Slather thick layers of almond butter over two slices of toast. 
  2. Cut fruit into small chunks/slices. If using frozen, defrost first.
  3. Arrange fruit neatly on toast. Before you serve, dress up your toast with one or a bunch of these! 
    • Plain or toasted coconut shavings
    • Homemade or store-bought granola
    • Chia, flax, hemp, pumpkin or sunflower seeds
    • Semisweet chocolate chips, cocoa powder, cacao nibs or a dark chocolate bar broken into pieces
    • Drizzle of raw honey, maple or agave syrup
    • A dash of cinnamon or Himalayan pink salt
